Healthy Cookies! No Sugar, No Flour, No Butter!

I love these “cookies!” They are great for breakfast, a snack, a pre-work out, or a late night desserthealthy cookies. They are soft, and tasty and amazing and they are guilt free because there is no sugar, no butter and no flour!

Feel free to mix and match the dried fruit and nut ingredients to your individual taste!

Dry Ingredients:

  • 1 1/2 cups oats
  • 2 scoops vanilla protein powder
  • 3/4 cup coconut flakes
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup of almond meal (or coconut flour)
  • 1/2 cup nuts, finely chopped (almond or walnuts)
  • 1/2 cup raisins
  • 1/2 cup craisins (or any dried fruit of your choice)
  • *optional for those with a sweet tooth 1/4 cup chocolate chips

Wet Ingredients:

  • 4 ripe bananas
  • 1 egg
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract

Preheat oven to 350*

Line baking sheet with cooking spray or parchment paper.

In a large bowl, combine all the dry ingredients.

In another bowl, mash the banana until, well until its mashed! If the bananas are too hard, pop them in the microwave for 1 minute. Once the bananas become mush, add the rest of the wet ingredients, and mix.

Pour dry ingredients over wet ingredients and stir until well combined.

Drop spoonfuls of the batter on to the baking sheet. Bake for about 25 minutes or until edges are golden brown… your house is going to smell amazing.
